"WE DIDN'T INVENT TEQUILA, WE JUST PERFECTED IT"
The best flavor develops slowly and naturally. That’s why from the start we’ve made tequila the hard way – never taking shortcuts and using only high-quality raw ingredients to develop deep, complex flavors. Agave ripens slowly: Every eight or so years. So our skilled Jimadors take great care to find and uproot only those Weber Blue Agave with optimal sugar content. Using a sharp tool called a Coa, they strip away the leaves to reveal the heart of the plant, the piña.
After being hand-chopped, our piñas are baked in small brick ovens to ensure they’re cooked evenly. Then, they’re crushed by a two-ton volcanic stone Tahona wheel and a roller mill. In fact, Patrón has more working Tahonas than any other tequila producer in the world. The resulting mixture is fermented for three days, distilled and, in some cases, aged in handmade barrels. Two months at minimum for Patrón Reposado and all the way up to ten years for Extra Añejo 10 Años, our oldest tequila.
The tequila itself may be the most obvious element in our craft story, but in Mexico, each signature bottle of Patrón is measured and molded to perfection. Our small-batch spirit is then bottled, but our attention to detail doesn’t stop there. Whether we’re sustainably harvesting fine Portuguese cork or having the masters of French crystal, Lalique, design a beautiful crystal stopper, it must be perfect.
Our entire tequila-making process takes place at Hacienda Patrón, where we only make Patrón. And we take pride in everything about it. From our eco-friendly reverse osmosis irrigation system to the agave byproduct we recycle. And most importantly, in the people involved in making our tequila – 60 hands from beginning to end.
We will be serving a set menu, so if you have any dietary restrictions please be sure to inform us in advance so that we can make an accommodation.

Experience an exquisite multi-course meal paired with tequila from Don Julio.
Sitting 6500 feet above sea level, the highlands of Jalisco is where it all began. It's in this extreme climate, surrounded by rich volcanic soil, where the legendary distillery of La Primavera was founded and Don Julio Tequila was born.
The Jaliscan Highland's warm days, cool nights, and rich clay soil create the perfect microclimate for the cultivation of blue agave. However, its high altitudes make it difficult and physically demanding to farm and harvest crops. Don Julio González knew this but stayed in the highlands, and endured the extreme conditions so he could create the world's finest tequila. His devotion to his craft truly knew no limits. The result? A tequila with exceptional substance and indisputable spirit.
Since 1947, over three generations of the Jimador families have worked with Don Julio. Their devotion to Don Julio's process and methods is unmatched and their mastery in planting, farming and harvesting agave have been passed on for generations and can be traced back to Don Julio himself.
Instead of harvesting entire agave fields at once, our Jimadors painstakingly harvest plant by plant, expertedly assessing the age and health of every agave. To increase the quality of their harvest, they handpick and uniformly handcut the agave pencas (leaves) from the piña. Without the devotion and care of our legendary Jimadors, our tequila's exceptional quality wouldn't be possible.
We will be serving a set menu, so if you have any dietary restrictions please be sure to inform us in advance so that we can make an accommodation.

We will be sharing a Greek Easter-style afternoon on Sunday, May 7th.
Chef Joe Peirano will be roasting a Spring Lamb in the wood-fired oven at Artisan Lavinia. A true Spring Lamb, tender like you have probably never had before. And all the Greek sides: spanakopita, tzadziki, lemon potatoes, skordalia, etc, etc. (you can come early and help in the preparation if you’d like).
Meredith’s baklava to finish.
And a selection of the best local wines, as well as an exceptional Greek wine I’m importing.
And Greek and Middle Eastern music by Giorgios and Moshe.
And it will all happen at the Frenchtown Inn, which by then will have completed a make-over at the hands of Heather Thompson.
It will be outside, and I have assurances that the weather will be spectacular.
We will start at 1:00 and have a leisurely flow until late afternoon.
